Crunchy Crumbly Chinese Salad

From Blondee: Glamour In The Kitchen

Serves 4 to 6

Ingredients:

  • 1 head of cabbage, chopped in thin slices
  • 1 head of your favorite lettuce
  • 1 medium size red onion, chopped
  • 1 small can water chestnuts, drained
  • 3 celery spears, chopped
  • 1 green pepper, chopped
  • 1 cup Chinese sprouts
  • 1 small can mandarin oranges, drained
  • ¼ c. macadamia nuts
  • 1 small can black olives, chopped and drained
  • ¼ c. snow peas, chopped


Directions:

  1. Toss all above together and put in an elegant glass bowl.
  2. Mix these ingredients in a small bowl and pour through salad:
    • 1/3 c. fresh squeezed orange juice
    • 1/3 c. dark brown sugar
    • ¼ c. olive oil
    • Dash of garlic powder
    • Salt and pepper

    • Note: I add about 2 T. of soy sauce so it is a version of my Tickle Tart Teriyaki Sauce
  3. Fry 10 wonton skins until golden brown in olive oil, drain and crumble for the top of salad.


You can place grilled chicken, steak or salmon on the top if you would like.
