Pumpkin Chocolate Chip Muffins

Ingredients:

  • 2 large eggs
  • 1 cup plus 1/4 cup of organic sugar
  • 1/2 cup of canola oil
  • A heaping cup of pumpkin
  • 1 1/2 tsp of gluten-free vanilla
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 3/4 tsp pumpkin spice
  • 1/4 tsp cinnamon
  • 3/4 cup of mini chocolate chips
  • Mix first 3 ingredients for 3 minutes, add pumpkin and vanilla. Sift dry ingredients in a separate bowl then add to the pumpkin mixture, add your chocolate chips and place in cupcake papers or in lightly greased muffin tins. Bake for approximately 15 - 20 minutes at 350 degrees.

    Combine 8 oz package of cream cheese, 1 stick of butter, 1 & 3/4 cups of powdered sugar and 2 tsp of vanilla. Top your muffins with icing when fully cooled.
