Asparagus Broccoli Sun Dried Tomato Omelet

Ingredients

  • 3 Eggs
  • Cheddar Cheese shredded
  • Feta Cheese crumbled
  • Sun dried Tomato
  • Asparagus
  • Broccoli
  • Spinach
  • Beat the 3 eggs together and set aside. Mix together the shredded cheddar, and crumbled feta cheeses. Chop the asparagus, broccoli, spinach and sun dried tomatoes into a semi coarse chop.

    In a sauté pan with clarified butter sauté the chopped vegetables. While that is cooking begin to cook the eggs stirring the eggs until they begin to hold together. Pour in the sauted vegetables and incorporate them into the eggs. Just before setting up, top the egg and vegetable mixture with the Cheddar and Feta cheese blend.

    When set fold onto serving plate
