Best-Ever Hamburgers

There¡¦s no reason to settle for average hamburgers when you¡¦ve got the know-how to make them great. These are loaded with flavor, never dry as Egypt in August.

Makes 6 burgers

  • 4 ounces cremini mushrooms
  • 1 1/2 pounds lean ground beef
  • 1/2 pound ground pork
  • 2 tablespoons Worcestershire sauce
  • Freshly ground pepper to taste
  • 2 tablespoons canola oil
  • 1. Place the mushrooms in a food processor and pulse until they are the consistency of very coarse salt, not a soggy paste. Alternatively, slice them into thin strips, place them on a cutting board, and repeatedly rock a large knife through them until they are coarsely ground, regathering them and repositioning them over and over as you rock the knife through them.

    2. Dump the ground mushrooms in a large bowl; add the ground beef, ground pork, and Worcestershire sauce. Stir in several grinds of black pepper, then mix together before forming into 6 patties. Make a thumb-shaped indentation in each patty to prevent balling up over the heat.

    3. Heat a large skillet or grill pan over medium heat. Swirl in the oil and add the patties. Cook, turning once, until well-browned, until an instant-read meat thermometer inserted into the center of one patty registers 160„aF, 8 to 10 minutes.
