Cooking with the Candidates: Chris Shays

Blueberry Crisp

Filling:

4 cups fresh or frozen blueberries
1/4 cup sugar
3 Tablespoons flour

Topping:
3/4 cup flour
3/4 cup old fashioned oats or quick oats
3/4 cup brown sugar
1/2 cup (1 stick) butter

Directions:

Place blueberries in a large bowl. Combine sugar and flour and pour over the berries. Mix so that the berries are coated with the sugar mixture. Pour into a 8x8 in. or 7x11 in. glass baking pan that has been lightly buttered.

In another bowl combine all of the topping ingredients. Mix together with a fork, pastry blender or one hand. Use your hand to crumble this mixture evenly over the berries.

Bake uncovered in a 375 oven for about 30-40 minutes. The berries should be bubbly and the topping should be golden brown.

Serve warm plain, or with ice cream or whipped cream.

Chris's Tip: Serve in a bowl with heavy cream.
