Recipe of the Week: Low-Fat Pumpkin Cake

Low-Fat Pumpkin Cake

Ingredients:

1 (15oz) can pumpkin puree

2/3 cup low-fat Greek yogurt

1 tsp. vanilla extract

4 egg whites

1 tsp. baking soda

1 cup white sugar

3 tsp. baking powder

2 cups all-purpose flour

½ tsp. salt

2 tsp. pumpkin pie spice

Cooking spray

 

Directions:

Preheat oven to 350F degrees. Spray an 8x8-inch square glass baking dish with cooking spray.

Mix pumpkin, yogurt, vanilla, egg whites and sugar in a large mixing bowl. Once well combined, add in baking soda, baking powder, flour, salt, and pumpkin pie spice until fully mixed.

Bake for about 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
