La Tavola Tiramisu
7 ea Egg Yolks
1 ¼ Cups Sugar
½ Tablespoon Vanilla Extract
2 Cups Heavy Cream
3 Packs Lady Fingers
½ Jar (1oz) Instant Espresso
¾ qt Water (Room Temp)
¼ Cup Kahlua
¼ Cup Crème de Cacao
¼ Cup Myers Rum
¼ Cup Marsala
1/8 Cup Sugar
In a stand mixer, whip the cream to medium peaks and refrigerate
In another bowl, place the egg yolks and first measure of sugar and whip until it reaches the ribbon stage
Switch to a paddle attachment and add mascarpone and vanilla. Mix until well incorporated and thick.
Place mascarpone mixture in a large bowl and carefully fold in the whipped cream.
In another bowl, combine water, espresso, second measure of sugar, and liquors. Stir well to combine.
Dip the lady fingers into the liquor mix and lay down an even layer on the bottom of the pan.
Spread half of the mascarpone on top of the lady fingers.
Repeat with another layer of lady fingers and mousse.
Refrigerate for 24 hours and top with cocoa powder.
