Maple Walnut Drop Cookies
1 1/2 sticks unsalted butter, softened
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons maple extract
3/4 cup applesauce
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups walnuts, finely chopped
Preheat oven to 350 F.
In an electric mixer, cream butter, sugar and brown sugar until light. Add maple extract, applesauce and egg. Mix until blended.
On low speed, add flour, baking soda, salt, and walnuts. Mix just until blended. Dough will be soft and sticky.
Drop from a teaspoon onto a parchment lined cookie sheet, spacing each 2 inches apart. Bake 10 to 12 minutes or until lightly browned.
Remove cookie sheet from the oven. Cool cookies on a wire cooling rack. Serve plain or frost with maple confectioners icing. While icing is wet, sprinkle with bacon bits, if desired.
Makes about 50 cookies.
Maple Confectioners Icing:
3 cups confectioners sugar
3 teaspoons maple extract
1/4 cup water
Blend all ingredients until smooth.
