Eggplant Lasagna Bolognese


Large eggplant
Pasta Cosi Bolognese
Coconut flour
Fresh basil and parsley
Almond meal / flour
Salt and pepper to taste


Peel the eggplant and slice about ¼ in thick. Dredge in the flour seasoned with salt and pepper, then dip in the mixed eggs with fresh herbs. Sauté in olive oil until golden brown.

Next, layer like a traditional lasagna: sauce/eggplant, sauce/eggplant.

Bake at 350 degrees for 30 to 45 minutes. Top with almond meal for the last 15 min in the oven.


Spaghetti Squash Puttanecsca


1  Spaghetti squash ( serves approx. 4-6 )
1 quart Pasta Cosi Marinara
¼ cup Capers
¼ cup Anchovies
Sliced garlic
¼ cup Black Olives (kalamatta)
Fresh basil and parsley
Salt and pepper to taste
*Capers, anchovies and blk olives can be added to taste


Slice squash in half and remove seeds. Place flat side down on a sheet tray with water just to fill the bottom of the pan. Bake for approximately 30 minutes or until soft to the touch.

Sauté garlic, capers, anchovies, blk olives till lightly browned. Add marinara sauce and simmer. Add parsley and basil.

Remove squash, let cool, and scrape out of the shell. Add amount needed to your liking and add sliced grilled chicken on top.
