Butternut and Acorn Squash Side Dish
1 Butternut squash
1 Acorn squash
1 Medium white onion
2 Granny Smith apples
Whimsical Olive Oils Herb & Garlic Olive Oil
Salt & Pepper, to taste
Slice butternut and acorn squash into wedges and cut onion into thick slices. Saute squashed and onion in Herb & Garlic Olive Oil and sprinkle on salt and pepper. Place in a casserole dish.
Dice the Granny Smith apples, drizzle lightly with orange juice, Her & Garlic Olive Oil, and sprinkle with cinnamon, salt and pepper, and brown sugar.
Cover and place in 350-degree oven for 30-45 minutes until done.
This can be prepped 1-2 days ahead of time.
