Better Boddler: Sweet Beet Chips and Butternut Squash Macaroni

Sweet Beet Chips

3 medium -sized beets
1 tablespoon olive oil
1 teaspoon  sea salt

Slice unpeeled beets thinly with food processor slicing blade.  Place sliced beets onto lightly oiled cookie sheet or on parchment paper. Toss with olive oil and sea salt.   Arrange in one layer and bake at 375 degrees for 30 minutes.


Butternut Squash Mac n' Cheese

1 box organic mac n' cheese
1 box slightly defrosted, organic butternut (winter) squash

Prepare mac n' cheese as directed on package.  Add the butternut squash and stir until well mixed. Serve warm.
