1 medium head of cauliflower (washed)
3 Tablespoons olive oil
1 teaspoon smoked paprika
Sea salt to taste
Remove stem and leaves from head of cauliflower. Cut or rip apart into small florets and place on cookie sheet. Drizzle with olive oil then sprinkle with smoked paprika and salt. Toss well to coat florets. Spread in one layer on pan and bake at 400F for 30 minutes.
Very Veggie Couscous
1 cup couscous
1 cup water
1 tablespoon olive oil
½ teaspoon sea salt
½ cup boxed organic soup
1 ½ cups roasted or fresh diced vegetables
Grated parmesan cheese (optional)
Bring water to boil in large pot. Add couscous, then remove pot from heat, cover and let stand 5 for minutes. Fluff with a fork. Stir in olive oil, salt, soup and vegetables. If desired, top with grated parmesan cheese before serving.
