Easy Cannoli Cups with Christine Ieronimo

Christine Ieronimo with Easy Cannoli Cups

Ingredients:

1 pkg of won ton wrappers

2 cups of ricotta cheese (drained over night in cheese cloth)

3/4 cup of confectioners sugar

1/2 teaspoon vanilla extract

Directions:

Mold won ton wrappers into mini muffin tins and bake at 350* for 5 minutes until slightly brown.

Put aside and let cool.  In a bowl,  mix the drained ricotta cheese, sugar and vanilla until well blended.  Scoop teaspoon of cheese mixture into each won ton.  Add a few mini chocolate chips to each cup and serve.  May also dust with confectioners sugar.    Keep refrigerated if not serving right away.
