Grilled Chicken Breast Smothered with Vegetables
Ingredients:
2 thin chicken breast
Fresh herbs of your choice
Crushed garlic
¾ cup sliced onions
¾ cup sliced peppers
1 cup sliced mushrooms
To Taste: Kosher salt & pepper
¼ cup Sherry wine or balsamic vinegar
¼ cup Virgin olive oil
Whole grain bread of your choice (to make a sandwich)
Directions:
Lightly oil a pan; place chicken down; place herbs and garlic; spread vegetables over the top;
Mix oil and vinegar and pour evenly over the top of vegetables; season the whole with salt and pepper
Place under broiler until vegetables are crisp, slightly brown and chicken is 165º in the center (about 12 min.; remove and serve as is or on a sandwich using whole grain bread (don't forget to pour pan juices over the whole.
