Pan seared polenta w/ exotic mushrooms and Sicilian style sausage.
Vittoria Polenta : 1 lb. course ground corn meal, 4 C water,1 tsp. Kosher salt, 1 tsp. black pepper. Cook until thickened - constantly stirring. Add grated Pecorino Romano to taste. Pour into an oiled sheet pan and cool. Cut into 4" x 4" squares. Sautee garlic & parsley. When crispy, add polenta square. Serve on a bed of marinara and add sautéed sausage and mushroom or you may add your favorite toppings.
