Gluten and Dairy Free and Vegan Quesadillas


Gluten+Dairy Free+Vegan Quesadillas
1 cup red peppers
1/4 cup red onions
2 gluten free tortillas
1 cup dairy free cheese (mozzarella, cheddar or mix)
1/2 cup hummus (recommended: Baby Zach's BBQ smoked black bean hummus)


1. Spread cheese evenly over tortillas on baking pan. Broil separately 2 minutes until melted.

2. Heat stir fry pan, add 1 tsp olive oil, toss in onions then 30 seconds later peppers. Simmer for 3 minutes. Add salt and pepper.

3. Take vegetables off stove after 3 minutes. Take out tortillas from oven, lay hummus evenly on top of one tortilla and toss vegetables on top. Place other tortilla on top and put back in broiler for 1 min. Flip and toast other side for 1 min

4. Enjoy!
