Chicken Marsala


Chicken Breasts   (BL/SL) (4)

Flour 1 Cup

Salt ½ tsp.

Pepper  ½ tsp.

Onion Powder ½ tsp.

Butter  2-4 oz.

Olive Oil  2-4 oz.

Marsala Wine  1 Cup

Chicken Stock 1/3 Cup

Mushrooms (Fresh) Sliced 1 Cup


Pound chicken breast until an even thickness, Slice the mushrooms, and blend together in a medium bowl the flour, salt, pepper and onion powder.

Heat a medium sized sauté pan, add half the butter and half the olive oil and heat till it starts to foam.  Dredge chicken in flour (Shake off excess) and add to hot pan.  Cook for 3 minutes on each side or till lightly browned. Add mushrooms and sauté about 2 minutes ,shaking pan occasionally to keep from sticking.  Add marsala and place chicken and mushrooms into a serving dish.

Return the pan back to the burner and add the chicken stock, deglaze pan and reduce the stock to half.  Pour the stock over the chicken, garnish with chopped parsley and keep warm till service.
