Date-night shrimp scampi (Serves 2)


1 cup of uncooked, whole wheat pasta

1 tbsp of olive oil

4 tsp of minced garlic

1/4 tsp of red pepper flakes

2 tbsp of fresh or dried basil

1/3 cup of dry white wine

1/2 lb of frozen deveined and cooked shrimp

2 cups of cherry tomatoes

1/4 cup of grated Parmesan cheese



Cook the pasta according to package instructions

While the pasta is cooking, thaw the shrimp by running cold (not hot) water over it while it sits in a colander

Once shrimp is thawed, remove the tails

Heat a large cooking skillet over medium heat and add the olive oil

Saute the garlic, crushed red pepper flakes and basil in the olive oil

Add the white wine and let simmer for 2 minutes

Add the shrimp and tomatoes and let simmer for 5-8 minutes

Toss the shrimp with the pasta and Parmsean cheese and serve
