Cake in a Cup - with Sweet Maria's Bakery
You can use a variety of cakes, pudding, fruit, toppings and whipped cream for any of these treats. Here's our basic pound cake, and whipped cream recipes.
½ pound butter, softened
1 cup sugar
2 cups cake flour
Pinch of salt
1. Grease and flour or line a 4 x 8 x 2 ½" loaf pan with parchment paper.
2. Preheat oven to 350 F.
3. Make the cake. In the bowl of a standing mixer ( or using a hand mixer) cream the butter and sugar until light. Add eggs, one at a time, beating well after adding each one. Be sure to scrape down the sides of the bowl after adding each egg. Beat 1 minute on medium high speed. On low speed, add flour. Mix just until blended. Pour batter into prepared pan.
4. Bake 45 to 50 minutes or until a tester inserted into center of the cakes comes out with a fine crumb.
5. Cool cake in pan 10-15 minutes. Carefully remove cake from pan and continue to cool on wire cooling rack.
1 1/2 cups heavy cream
1/2 cup sugar
In an electric mixer, whip cream until soft peaks form. Gradually add sugar and continue to beat until stiff. Use immediately.
Assembly: Layer cake, cream and fruit in a cup, and enjoy!
