Home made matzo

Yields 12

  • ½ C oat flour
  • ½ C whole wheat flour
  • ½ C spelt flour
  • 1 C all purpose flour
  • 1 ¼ C water
  • 1 t salt

Heat oven to 450F.  Place all dry ingredients in food processor.  Process until combined.  Add water and pulse until dough forms.  Divide into 12 balls.  Roll out and brush with olive oil and seeds (optional)  Bake until crispy about 5-7 minutes.

 

Pistachio Feta Dip

  • 4 oz shelled unsalted pistachios
  • ¼ C olive oil
  • 10 oz feta cheese
  • 1 bunch dill
  • 1 bunch cilantro
  • 1 garlic clove
  • ¼ C Greek yogurt
  • 1 lemon

Process the pistachios and the olive oil for few seconds.  Add remaining ingredients and process until not entirely smooth.  Season with salt and freshly ground black pepper to taste.
