Here is the recipe for creamy cucumber soup: 

INGREDIENTS:

  • 5 medium cucumbers, seeded and chopped (save some for slices as garnish)
  • 3/4 teaspoon sea salt
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill (plus extra for garnish)
  • 2 tablespoons lemon juice
  • 1 teaspoon white wine vinegar
  • 1 cup reduced-sodium chicken broth
  • 1/4 teaspoon freshly ground pepper
  • 1 avocado, diced
  • 3/4 cup low-fat plain yogurt 

DIRECTIONS:

  1. Salt cucumbers and let sit for 30 minutes in a colander to drain.
  2. Add all ingredients in a blender and puree.
  3. Chill before serving. Garnish with cucumber slices and fresh dill.
