Garlicky Salmon over Orzo Salad

Chef Roc is back in the house today for our Better Dinners segment. He is here to share a great recipe he is making with a new product that makes seasoning and marinating easy.

Garlicky Salmon over Orzo Salad:

Dressing:

1/2 cup olive oil

juice of 1/2 orange

juice of 1/2 lemon

1/4 cup apple cider vinegar

1 teaspoon sesame seed oil

1 tablespoon Dijon style mustard 

2 cloves minced garlic

1/2 cup of loosely packed rough cut cilantro

1/4 teaspoon salt

1/8 teaspoon black pepper

 Salad Mix:

 2 cups cooked orzo (oval shaped pasta)

1/2 cup 1/4-inch diced red pepper

1/2 cup diced green onion

1/2 cup pea pods

1/2 cup sliced almonds

 4 – 6oz salmon filet

 4  FlavorSheets® Roasted Garlic& Herb

 Garnish:

 11 oz. can mandarin oranges, drained

Method:

Place the dressing ingredients into a blender, or in a tall container if using a hand blender. Blend until smooth. Cover and refrigerate until ready to use.

Rinse salmon and place on 2 FlavorSheets® Roasted Garlic & Herb Seasoning Sheets spice side up and place 2 sheets spice side down on salmon. Place in ZiplocVacuum Bag and vacuum Seal. Can be done a day ahead of time.For fast results, 10 minutes minimum in the vacuum bag, we call this Power-Marinating.

Remove from bag and cook salmon your favorite way.  Place the salad mix ingredients in a large mixing bowl.

Pour three-fourths (3/4) of the dressing over the salad mix and combine. NOTE: DO NOT OVERMIX. Serve the remaining dressing on the side.

Place salad on a serving plate, top with cooked salmon Garnish with mandarin orange segments. Enjoy
