Nicci G's Pork Loin

It's Monday and that means it is Better Dinners time. Nicci G's restaurant and bar from Avon joined us in the Better Kitchen to gives a delicious recipe you can make for your family tonight.

Nicci G's Pork Loin:

5-7 lb.   Boneless Pork Loin   ( Fileted ) 

1/2 ounce   Fresh Rosemary ( remove stems )

1/2 ounce   Fresh Sage     ( remove stems )

3-4 cloves   Fresh Garlic  ( peeled and cleaned )

1 bunch of  Fresh Flat Italian Parsley

3/4 of cup   Grated Parmesan ( your favorite brand )

1/4 to 1/2 cup    Extra Virgin Olive Oil  ( enough to make ingredients wet )

Butchers string to truss the loin

Method:

Into a mixing bowl add dry ingredients saving oil until last. Mix until well blended add oil until wet.

Salt and pepper to taste on the pork loin only inside and out after fileting apply the herbs into the evenly to the inside of the fileted loin.

Roll back up fat side out, tie loin put on top of coarsely cut onion, celery and carrots. 

Rub the outside with olive oil salt & pepper to taste put the rest of the whole herbs. 

Into a 350 degree preheated oven for 30 minutes to seal meat,  then pull from oven add stock and potatoes, then back into oven until inside temperature reaches 160 degrees remove and let rest for 15 minutes, slice and serve.
