Need some food inspiration for tailgating nights? Well the amazing Bob Sullick from the Mulberry in Manchester is in the Better Kitchen to teach us some tasty tailgating snacks.

Grilled Corn with Chilie and cheese:

12 Ears of corn

3 large shallots thinly sliced into rings

½ to 1 whole chile

½ c fresh lime juice

8 Tblsp vegetable oil divided

½ cup cilantro chopped

6 oz cotija cheese or queso fresco ½ c cilantro

Method:

Cut corn off of 2 cobs and put  in a large bowl.  Add shallot, chile and lime juice, season with s&p.

Brush the rest of the corn with oil and sprinkle with salt and pepper. Grill until nicely browned. Cut off the cob. Add kernels to the reserved corn mixture along with cheese, cilantro and 2 T oil. Season with S&P

Queso recipe

Butter

1 shallot, minced

2 clove garlic, minced

1-2 jalapenos, chopped

2 pieces canned chipotles, chopped

1 ½ C half & half

4 oz cream cheese, shredded

2 tsp yellow mustard

8 oz smoked Gouda, shredded

4 oz sharp cheddar, shredded

Rotel or diced tomato

S+P to taste

Method:

Sweat shallot, garlic, jalapenos in butter.

Add chipotles and half& half, let simmer for 5 min

Add tomato and mustard and simmer 5 min

Stir in all shredded cheeses

Add salt and pepper and taste
