It's time for better food and it's Tuesday, which means it is New Restaurant Tuesday.
Here with us are Rob and Meghan Wagner of Onion Mountain Kitchen. You may have hear of their farm-to-table catering company, but they just recently opened their very own restaurant in Simsbury.
If you want to check out Onion Mountain Kitchen, they are located at 928 Hopmeadow Street in Simsbury. They are open Tuesday through Saturday from 11 a.m. to 7 p.m. They still do catering and if you're interested check out their website onionmountaincatering.com.
Onion Mountain Kitchen’s bbq pulled pork sandwich:
1 5lb boneless pork shoulder ¼ cup chopped garlic
1 Tbsp canola oil brioche buns
½ cup bbq rub seasoning cheddar cheese
1 qt chicken stock cole slaw
1 cup pineapple juice bbq sauce
Trim your pork shoulder so there is a minimal amount of fat remaining. Rub with canola oil and pat on bbq rub seasoning. Refrigerate overnight.
Spray a deep baking pan well with non-stick spray. Place pork shoulder in pan and bake uncovered at 350 degrees for 1 hour or until rub is caramelized.
Remove pork from oven and add chicken stock, pineapple juice, and garlic to pan.
Cover with foil and return to oven covered for an additional 3-4 hours or until pork pulls apart easily with forks.
Let rest 30 minutes before pulling.
Slice a brioche bun, top with cheese, pork, bbq sauce, cole slaw.
