Warm up with this delicious cauliflower soup

Cauliflower Soup:

1 large head Cauliflower

1 quart of Chicken Stock

1 medium onion, chopped

2 large cloves garlic, diced

1 cup organic whole milk

2 tablespoons butter

1 tablespoon olive oil

Salt + pepper to taste

Method:

2 cups of bread crumbs

¼ cup olive oil

Salt + pepper to taste

Heat ¼ olive oil over medium heat and add bread crumbs, salt and pepper.

Toast until brown and fragrant, about 5 minutes.

Set aside on a paper towel.

Place onion and garlic in medium stockpot with 2 tablespoons butter and 1 tablespoon olive oil over medium high heat.

Sautee until both are fragrant and translucent, but not browned, about 5-7 minutes.

Break apart head of cauliflower into small florets, add to stockpot.

Add 1 quart of stock, bring mixture to a boil and reduce to a simmer. Cook for 25 minutes with a lid.

Season with salt and pepper

Once cauliflower is cooked and is fork tender, puree the mixture in a blender or with a hand blender until smooth.

Add 1 cup of milk and puree.

Strain mixture with a sieve, season with salt and pepper to taste

Top with toasted bread crumbs.
