Pineapple Gusher Cocktail

Pineapple Gusher Cocktail (Serves 8)

Prep Time: 15 minutes | Cook Time: 5 minutes

Ingredients:

1/2 cup dark brown sugar

1 medium pineapple, peeled, cored and chopped (about 1 lb.)

2 tbsp. chopped fresh mint leaves

1 lime, zested and juiced

2 cups ice cubes

1/2 cup pineapple juice

Method:

For the simple syrup, in a small saucepan combine brown sugar and ½ cup water. Bring to boiling; reduce heat. Cook 1 minute or until brown sugar dissolves. Remove from heat; let cool completely.

In a blender combine 1/2 cup water, plus pineapple, simple syrup, mint, lime zest, lime juice and ice cubes. Add pineapple juice; blend at high speed until smooth.

Pour into chilled glasses, and serve!

*Cook's tip: For an alcoholic version, substitute 1 cup of light rum for the 1/2 cup pineapple juice and ½ cup water added in step 2.

Salmon Flatbread

Salmon Flatbread (Makes 24 squares)

Prep Time: 10 minutes | Cook Time: 20 minutes

Ingredients:

1 to 1 1/4 lbs. salmon fillets

1 tbsp. plus 1 tsp. ShopRite® Imported Olive Oil, divided

1 (11-oz.) ball refrigerated whole-grain pizza dough*

1 (6.5-oz.) pkg. garlic-herb spreadable cheese

1 tbsp. capers, drained

1/3 cup ShopRite® Whole Roasted Peppers, cut into thin strips

1 large green onion, sliced

Method:

Preheat oven to 450°F. Place salmon on a rimmed baking sheet. Drizzle with 1 teaspoon of the oil, and season with pepper to taste. Bake 9 to 12 minutes or until fish flakes easily with a fork. Remove from oven; let cool slightly. Remove and discard skin from salmon. Flake salmon into pieces; set aside.

Meanwhile, on a large baking sheet, shape pizza dough into an 11x13-inch rectangle (rounding the corners slightly). Brush with remaining 1 tablespoon oil. Bake 5 minutes or until crust appears dry on the surface. Remove from oven.

Reduce oven temperature to 425°F. Spread cheese evenly over crust; top with salmon, capers and peppers. Bake 6 to 9 minutes more or until crust is golden brown. Cut into 24 squares, sprinkle with green onion, and serve.

*Recipe can also be made with regular pizza dough.

Shrimp and Avocado Salsa

Shrimp and Avocado Salsa (Serves 6)

Prep time: 10 minutes | Cook time: 10 minutes

Ingredients:

1/2 lb. unpeeled medium raw shrimp

1 Avocado, pitted, peeled and diced

1 cup chopped tomato

2 tbsp. minced red onion

1 tbsp. finely chopped jalapeno

2 tbsp. fresh lime juice

2 tbsp. chopped fresh cilantro

Method:

In a medium pot bring 1½ quarts water to boiling. Add shrimp; cook 3 to 5 minutes or just until shrimp turn pink. Drain; rinse with cold water. Peel and devein shrimp; remove tails. Coarsely chop shrimp. Cover and refrigerate at least 30 minutes.

In a large bowl combine avocado, tomato, onion, jalepeño, lime juice and cilantro. Add chilled shrimp, and pepper to taste; toss gently to combine. Transfer to a serving bowl, and serve.

Loaded Mushroom Toasts

Loaded Mushroom Toasts (Makes 24 toasts)

Prep time: 10 minutes | Cook Time: 15 minutes

Ingredients

3 tbsp. Wesson® Canola Oil

3/4 cup chopped onions

2 cups sliced mushrooms

1/2 tsp. McCormick® Thyme Leaves

1 large whole-grain baguette cut into 24 slices

1 cup shredded Swiss cheese

1/2cup grated ShopRite® Parmesan

Method:

Preheat oven to 400°F. In a large nonstick skillet heat oil over medium heat. Add onions; cook and stir until softened. Stir in mushrooms and thyme; cook and stir 5 minutes or until mushrooms soften. Season with pepper to taste. Remove from heat.

Place bread slices in a single layer on a baking sheet; spoon evenly with mushroom mixture. Sprinkle with Swiss cheese and Parmesan. Bake 5 to 7 minutes or until cheese melts.

Transfer to platter, and enjoy!
