Cape Cod Mussels:

1 lb cleaned cape cod mussels

3 oz cooked applewood smoked bacon

3 oz confit garlic cloves

2 oz aji panca amarillo (lightly spiced Peruvian yellow pepper paste)

4 oz sherry wine

1 diced plum tomato

2 oz unsalted butter

1 oz scallions
