Cuatro de Mayo with Carla's Pasta!

It’s Cuatro de Mayo in the Better Kitchen.  Carla’s Pasta is showing us a festive way to make pasta and a pasta salad for any Cinco de Mayo celebration you have coming up.  Click here for more of Carla's Pasta.  Both recipes from today's show are below!

 Carla’s Maryland Style Crab Ravioli with Crème Verde


•1 Pack 5760 Carla’s Maryland Style Crab Ravioli

• 1 ea. Jalapeno Pepper, diced

•½ Shallot, sliced

•Salt and Pepper, to taste

•1 cup Heavy Cream

•1 Tbsp. Butter

•1 cup Cilantro, chopped

•1 tsp sugar

•1 oz. Tequila

•2 Tbsp. Lime Juice

Dish Execution:

1.Heat a sauté pan over medium high heat. Add butter and shallot and sauté until softened (about 2 minutes). Add Jalapeno to pan, sauté for additional 2 minutes.

2.Add Tequila and reduce until ½ of the liquid evaporates (about 2 minutes). Be careful not to add tequila too quickly as it will ignite with an open flame.

3.Add Cream, salt, pepper, lime juice, sugar, cilantro, and reduce until slightly thickened. About 3 minutes.

4.Simmer Carla’s Maryland Style Crab Ravioli for 2-3 minutes in boiling water.

5.Strain Pasta and add to cream sauce. Transfer to a serving dish and garnish with any reserved cilantro. Enjoy!

Carla’s de Mayo Fiesta Tortellini Salad


•1 Pack 7800 Carla’s Naked Tortellini SNS Bag

•4 Tbsp. fresh Lime Juice

•1 tsp Sugar

•½ cup fresh Cilantro leaves, chopped

•Salt and Pepper, to taste

•¼ cup Carrots, shredded

•1 ea. Jalapeno Pepper, sliced

•1 clove Garlic, sliced

•½ tsp Ground Cumin

•¾ cup Extra Virgin Olive Oil

•¼ cup Corn Kernels, drained

Dish Execution:

1.Heat Carla’s SNS tortellini for 2:00 minutes in a microwave to thaw slightly. You could also thaw this product overnight under refrigeration.

2.In a mixing bowl, whisk together lime juice, jalapeno, garlic, sugar, cumin, cilantro, and extra virgin olive oil until combined.

3.Open Carla’s SNS tortellini and pour contents into mixing bowl with sauce. Add carrots, and corn and toss to combine.

4.Season with salt and pepper to taste.

5.Refrigerate until ready to serve. Enjoy!
