Recipe for Salmon Bites, as demonstrated on Eyewitness News This Morning on Saturday.


  • Norwegian Salmon        1 Lb (Skinless & Boneless)
  • Saffron            1 Pinch (powder)
  • Chili Arbol             1/8 Tea Sp
  • Himalayn Pink Salt      To Taste
  • Crushed Coriander       1/8th Tea Sp
  • Olive Oil          ½ Tea Sp
  • Unsalted Butter         ½ Tea Sp


  • Dill          ½ Oz
  • Cilantro      ½ Oz
  • Baby Spinach       ½ Oz
  • Chives             ½ Oz
  • Green chili        1 or as per taste
  • Himalayn Pink Salt To Taste
  • Lime Juice         A squeeze
  • Lime Zest     1/8th T Sp
  • Cream              1 Cup    
  • Green Apple        1

Sauce & Apple: Slice apple to thin roundels, preheat oven to 225 degrees F, arrange apple slices on a metal baking sheet, bake until apples are dried and edges curl up. Blanch and cool dill, cilantro, baby spinach, green chili and chives. Puree by adding cream and set side in a pan. Bring it to a quick boil (3 to 4 minutes) on medium heat, add salt, lemon juice and zest, whip it and set aside.

Fish: Cut salmon to equal pieces, season with saffron, chili, and salt and crushed coriander. On a medium heat heat a non-stick pan, add oil and butter. Sear salmon each side for about a minute and serve over sauce and garnish with apple crisps.
