6.13.16 Fiesta Quinoa Salad

Fiesta Quinoa Salad

Ingredients:

5 c cooked quinoa

3 c black beans rinsed

3 portabella mushrooms, diced

2 small red peppers, diced

3 jalepenos, minced

1 T minced garlic

1 bunch cilantro, rough chopped

2 c chopped strawberries

2 T + ½ c olive oil, divided

Juice of 2 limes

3 T coconut aminos

Splash apple cider vinegar

½ tsp oregano

½ tsp cumin

½ tsp coriander

Salt + pepper to taste

Directions:

Saute mushrooms, red bell peppers, jalepenos, and garlic in 2 T olive oil. 

Let cool.

Mix together the cooled quinoa, rinsed black beans, and chopped cilantro.

Add sautéed veggie mixture.

Stir together coconut aminos, lime, apple cider vinegar, and olive oil, add spices.

Add dressing to quinoa mixture.

Fold in strawberries.

Season with salt and pepper.
