California Summer Salad

CPK is back in the Better Kitchen!  Today we're making a delicious California Fields Salad, complete with watermelon, strawberries, and strawberry shortcake for dessert!  Click the link on the video for more.

California Fields Salad

3 C Watermelon Cubes

1 ½ C Strawberries, Sliced

5 C Field Greens

¼ C Basil Chiffonade

2 Fl Oz Champagne Vinaigrette

¼ C Feta, Crumbled

2 Tbl Pistachios

  1. Toss all ingredients together with the dressing in a mixing bowl
  2. Arrange the salad in the center of a chilled small coupe plate or a large coupe plate
  3. Be sure some fruit is visible on top of the salad
  4. Garnish with feta and pistachios evenly over the top of the salad
