Sweet Potato Pie Waffle Bowls

Classic Waffle Batter:
1.5 cup of gluten free flour
1/4 cup white sugar
1/2 cup light cream
1/4 tsp baking powder
Sweet potato pie mix:
2 large sweet potatoes(15-18oz each)
2 tbls apple pie spice
1.5 cup white sugar
1/2 tsp ground nutmeg
Green Onion, Sriracha Honey Glaze:
1 teaspoon sriracha
1/2 cup wildflower honey
2oz. fresh chopped green onion
This is such an amazing brunch idea! The green onion, sriracha honey glaze is very easy.
Simply combine all ingredients together in a bowl and blend together with a fork.
You can cover it and have it handy for the drizzle at the end.
Now create your waffle batter and the sweet potato pie mix in two separate bowls.
What we want to do is be able to play with the different levels of waffle batter to sweet potato pie mix to give us the perfect texture, density and consistency!
Here is what works best for me and my family:
3 teaspoons waffle mix
2 teaspoons sweet potato pie filling
The key to this recipe is the consistency of the waffle.
There are so many variables and each batch is a bit different.
Some may like a heavier waffle, some may prefers a lighter waffle but again the key is to experiment.
Also, keep in mind that in this recipe I am using a gluten free flour with xanthum gum in it already so it will have a much better hold for waffles that gluten free flours with it.
Take a few test runs to get it just right for your family.
Once the waffle is made to your liking, you can fill it with almost anything your heart desires!
I usually hook up some scrambled eggs, honey glaze bacon, fresh chopped green onion and then drizzle on some of that green onion, sriracha honey glaze for a sweet/spicy original brunch idea!
