Cajun Sweet Potato Latkes

3 large sweet potatoes, peeled
1/3 cup chopped cilantro
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
3/4 cup oil for frying
YIELDS: 6-8 servings
Grate sweet potatoes on the coarse side of a grater or food processor. Whisk eggs and sprinkle salt, pepper and garlic powder into eggs and whisk. Mix in the cilantro. Add egg mixture to grated sweet potatoes.
Heat 1/2 cup oil in skillet. Place 1/4 cup batter into hot oil and fry on one side until golden brown. Turn over and fry on the other side until golden.
Remove from pan and place on paper towels to drain excess oil. Continue with remaining batter.
