9.27.17 Sesame Peanut Noodles

West Street Grill Sesame Peanut Noodles

Ingredients:

1 lb. fresh Chinese noodles, thin. Twain marquis Brand (plain noodles, thin)

Allow 4 ounces per person.

2 tbs. Japanese sesame oil

GARNISH-

 Julian of cucumber, finely diced small bunch of scallions

For the Sauce:

3 tbs. Chinese sesame paste

2 tbs. smooth peanut butter

1.5 tsp. Of garlic, chopped into a paste

3/4 inch of ginger, peeled and finely grated

3 tbs. light soy sauce

3 tbs. Rice vinegar

1 tbs. organic light brown sugar

2 tbs. Japanese sesame oil

1-2 tsp. Chili paste or chili garlic paste, or chili bean paste

To Prepare:

In a large bowl whisk the sesame paste and Peanut Butter, then just whisk all of the remaining ingredients together.

To Cook the noodles:

Cook the noodles in a large pot of boiling water for 3 to 5 minutes, or follow the package directions. Then drain and plunge in Coldwater. Train and shake off the excess water in a colander or large Seve. Drop into a large bowl in drizzle with the sesame oil and toss to coat the noodles. This will prevent them from sticking together. Next, toss the sauce with The noodles.

Divide into portions or leave in the bowl and top with the cucumber and scallions.. You could also top with cilantro.

Serve with chili pepper oil if you like them on the spicy side I do. I sometimes make them so hot that only hotheads can eat them and play the Elton John song rocket man!
