Crust: Short Dough Crust Butter 1# 2oz Confectioners Sugar 1# 2oz Eggs 5ea All Purpose 2# 4oz White Chocolate Mousse Ingredients: 4 oz. egg yolk 5 oz. sugar 21 grams of gelatin 1 lbs. of white chocolate 5 cups of heavy cream Method: Whisk egg yolk and sugar until ribbon Melt the white chocolate Dissolve gelatin in a ½ cup of cream Pour gelatin into ribbon yolks While whisking pour melted white chocolate into mixture Whip the remaining cream to soft peak Fold whipped cream into white chocolate base
