The Spooktacular Chili Challenge is happening October 27th in Simsbury. Chef Joseph Rose of The Riverview and Lisa Gray of The Chamber of Commerce are joining us. See the recipe below. Chili recipe by Riverview Catering Executive Chef Joseph Rose 1 cup diced onion 3 garlic gloves minced 1 jalapeno minced 1 pound ground beef 1 red pepper diced 1-12ounce beer dark lager such as Sam Adams Oktoberfest 1 can fire roasted tomatoes 2 tablespoons chili powder 2 tablespoons ground cumin 2 tablespoons paprika Salt and pepper to taste Brown ground beef until all fat is rendered, remove beef and save fat. Cook all vegetables except for tomatoes in rendered fat until soft. Add beef back in and add 1 tablespoon of each seasoning and stir. Deglaze pan with beer. Reduce beer ¾'s of the way and add tomatoes. Bring to boil, add remaining spices and season to taste.
