"Battle of The Chefs" is coming up in Ridgefield in a couple of weeks. Three of the six chefs competing are with us, Sarah Bouissou of Sarah's Wine Bar, Art Michealsen Jr. of Bartolo, and Bernard Bouissou of Bernard's of Ridgefield. Theyre telling us what we can expect from the competition and we're pairing up with a chef to see who can make the best guacamole! Battle of the Chefs: Dueling Duos is Sunday, June 2 from 4 to 7pm at Founders Hall on Danbury Road in Ridgefield. For tickets visit founders-hall.org. Starter Guacamole recipe Recipe provided by: Founders Hall Avocados … 2 … ripened Lime juice … 1 Tablespoon … fresh Onion … 1 Tablespoon … minced Jalapeno pepper … 1 Tablespoon … minced Tomato … 2 Tablespoons … diced Cilantro … 1 teaspoon, plus a pinch … finely chopped Generous ¼ teaspoon of kosher salt Salt … to taste Pepper … to taste In bowl, combine kosher salt and lime juice, whisk until salt dissolves. Cut avocado, add to bowl, mix and mash until desired consistency is reached. Add onion, jalapeno and cilantro. Mix well. Fold in tomatoes and finish with pepper and salt to taste.
