Lamb Burger w/baby spinach, feta cheese and Peppadew peppers topped with Tzatziki sauce

Ingredients:

1 lb. ground lamb

1/2 lb. ground chuck

1 cup chopped baby spinach

1/2 c feta cheese crumbled

1/2 c diced peppadew peppers

3/4 cup diced sweet onion

1 level tsp fresh oregano

2 large cloves of minced garlic

Salt and pepper

1/4 cup oil plus tbsp butter

Directions:

Place all in stainless bowl and mix well. Separate into four portions and make 4 portions of burgers. Press an indentation in the middle to create perfect form. Heat oil and butter in cast iron pan. Cook on both sides until medium done. Place in pita or crusty bulkie roll.

Tzatziki Sauce

Ingredients:

1 1/2 cup greek yogurt

1 cup diced seedless cucumber

1 tbsp minced fresh mint 1tbsp vinegar (white or wine)

Large clove garlic minced

Salt and pepper

Directions:

Place all together and mix well. Place on top of burger
