Steph and Adam are the couple behind the YouTube page Fit Couple Cooks. Adam is in today to show us how to meal prep a Mixed Vegetable Stir Fry. Mixed Vegetable Stir Fry Ingredients: 1 cup white or brown rice 1 tbsp olive oil 1 yellow onion, diced 4 garlic cloves, diced 2 carrots, chopped 2 red bell peppers, sliced 2 heads broccoli, chopped ¼ cup coconut aminos 1.Add 1 cup of rice to 3 cups of water to a saucepan, cover with a lid and bring to a boil. Cook following package directions until all the water has absorbed. 2.Add the olive oil to a frying pan or work on medium heat. Add the garlic and onions and saute for 3 minutes until fragrant. 3.Add the carrots and cook for 3 minutes to soften. Add the red bell peppers and broccoli. Stir and cover with a lid for 3 minutes on high heat. 4.Toss in the coconut aminos, stir once more and serve on top of the rice.
