Mexican Quinoa Bowl

Ingredients

2 cups uncooked quinoa

4 cups water

1 red onion, about 9oz (250g), diced

1 red bell pepper, diced

1 (15oz; 425g) can black beans, drained and rinsed

1 (15oz; 425g) can corn, drained and rinsed

1 jalapeño, optional

1 bunch of cilantro

2 tbsp olive oil 1

tsp salt

½ tsp freshly ground black pepper

1 tsp ground cumin

6 lime wedges, for garnish

Method

Make the quinoa according to package directions. In a large skillet, heat the olive oil over medium-high heat.

Add the onion and sauté for 3 minutes until fragrant.

Add the peppers and stir.

Cook for 2 minutes, then add the onion and pepper to the pot with the quinoa.

Remove the pot from the heat and stir in the beans, corn, cilantro, salt, pepper, and cumin.

Serve immediately or divide evenly among 6 meal prep containers.

Let cool completely before adding a lime wedge, putting on the lids, and refrigerating.
