Peppered Beef Crostini with Herbed Cheese and Candied Onions

Peppered Beef Ingredients:

3/4 Pound South West Filet

2 Tablespoons Olive Oil Plus More For Coating The Beef

1/2 Teaspoon Kosher Salt

1 Teaspoon Fresh Cracked Black Pepper

Set pan over medium heat. Generously coat beef with olive oil sprinkle with salt and pepper. Add two tablespoons olive oil to hot pan and swirl to coat. Return pan to heat and place beef in pan. Brown beef on all sides evenly 1-2 min each side. Remove pan from heat and let sit until room temperature. Cut beef in thin slices.

Candied Onions Ingredients:

2 Cups Sliced Red Onions

2 Tablespoons Olive Oil

1 Tablespoon Garlic

1/4 Cup Brown Sugar

2 Tablespoons Balsamic Vinegar

1/2 Teaspoon Dried Thyme

Salt and Pepper To Taste

Set a pan over medium heat. Add olive oil and swirl to coat. Add red onion and cook stirring often to brown the onion. Cook onions 10-15 min or until almost all liquid is gone. Add brown sugar, thyme, balsamic vinegar lower heat and cook until liquid thickens to consistency of syrup. Remove from heat and let cool.

Toasted Baguette Ingredients:

1 Loaf French Baguette Cut in 1/4 inch slices approximately 25-30)

1/4 to 1/2 cup olive oil

Kosher Salt to taste

Place cut baguette in a bowl and drizzle with olive oil then toss with kosher salt. Do not saturate bread. Bake 350 degrees 6 minutes on baking sheet. Flip bread over and bake additional 6 minutes. Remove from oven and let cool.

Herbed Cheese Spread Ingredients:

8 Ounces Softened Cream Cheese

4 Ounces Softened Butter

1 Tablespoon Garlic Minced

Zest of One Lemon

1/4 Teaspoon Dried Thyme

1/4 Teaspoon Dried Oregano

1/4 Teaspoon Dried Basil

!/4 Teaspoon Dried Dill

1/4 Teaspoon Dried Majoram

2 Tablespoons Fresh Chopped Parsley

2 Tablespoons Fresh Chopped Chives

Kosher Salt and Black Pepper to Taste

Place all ingredients in mixing bowl and gradually work together.

To assemble place a table spoon of the herbed cheese mixture on a crostini and spread evenly. Top with a slice of you peppered beef and a teaspoon of the candied onions. Serve at room temperature.
