Crust Ingredients: 2.5 cups graham cracker crumbs 1/2 cup all purpose flour 1/2 cup sugar 8 oz butter melted Melt the butter and mix with all of the dry ingredients Pack evenly into desired pans and pre bake for 10 minutes at 350*F Batter Ingredients: 2 lbs Cream Cheese 6 oz sugar 2T cornstarch 3 eggs 2 yolks 1 ea lemon juice and zest 1 ea vanilla bean split and seed removed Directions: ‘On a stand mixer on low speed, cream the cheese, sugar, and cornstarch for 10 minutes, scraping down the bowl every few minutes to eliminate lumps. Add the eggs 1 at a time scraping down the bowl after each addition. Add vanilla and lemon and mix on low until smooth and emulsified. Pour batter on top of the pre baked crust and bake in a shallow water bath at 275*F for about 30-40 minutes or until firm in the center. Cool to room temperature, serve!
