Nutty Lime Cilantro Spinach Salad

Serves: 2

Ingredients:

Salad:

6 cups baby spinach (6g protein)

½ avocado (2g protein)

3 tbs hemp seeds (11g protein)

1/2 cup pumpkin seeds (22g protein)

1 cup quinoa (8g protein)

Dressing:

1/4 cup olive oil

2 tbs freshly-squeezed lime juice

2 tsp honey

3 tbs fresh cilantro

1 clove garlic

1/3 cup Kite Hill almond yogurt (2g protein)

2 tbs flaxseed meal (3g protein)

1/2 tsp salt Freshly ground black pepper

Preparation:

Add dressing ingredients in a blender and combine Place spinach in a salad bowl and top with avocado, hemp seeds, pumpkin seeds and quinoa. Pour dressing over salad and toss to combine.
