Ingredients:

Red onions

Red peppers

Cucumbers

Kalamata olives

Halloumi cheese

Chopped herbs (mint, cilantro, parsley)

Apricots

Lemon vinaigrette

Lemon juice

Olive oil

Dijon mustard
