Spicy Cucumber SaladFrom Kevin Clewes at bartaco

Ingredients:

1 ½ pounds English cucumbers

½ cup chopped cilantro leaves

½ cup rice wine vinegar

¼ cup extra-virgin olive oil

1 ½ tablespoons kosher salt

1 tablespoon minced garlic

1 tablespoon red chili flakes

Directions:

1. Trim ends off cucumbers, slice in half lengthwise, then

into 3/8“ slices on the bias. Place in a large mixing

bowl along with remaining ingredients; mix well to

combine. Chill in refrigerator until ready to serve.
